Course 1: Lobster Red Pozole – Sous Vide Lobster Tail served in a Chipotle Fish Broth w Shredded Green Cabbage, White Hominy, Fresh Cilantro, Radishes, a Blend of Crumbled Queso Blanco and Cotija Cheese with Fried Tortillas for garnish.
Course 2: Duck Confit Malanga (Taro) Tostada – Malanga Lila Tostada with Shredded Duck Confit, Queso Blanco Fundido, Avocado Mousse, Cucumber Pico de Gallo, Refrito Beans, Shredded Red Cabbage En Crudo, Cilantro and Spicy Queso Blanco Bechamel.
Course 3: Street Corn style Risotto w NY Strip Tagliata – Sweet Corn Risotto made with Chicken Broth, Tahin, Lime, Cilantro and Cotija Cheese with NY steak Tagliata.
Course 4: Marquesita – Crepe filled with Chocolate and Jam, finished with Grated Edam on top
